Roast Chicken in the Crockpot

Take a chicken that fits comfortably in your crock. Cut up a cooking
onion and stuff it inside the chicken, then put the chicken in the
crock. Sprinkle with paprika, thyme, and/or your favourite herbs.
Squeeze the juice from a lemon over the top.
Place the chicken on a trivet or meat rack. Cook it on low for
8-10 hours.
The chicken will end up tender and moist but not browned.
