Squash Casserole

4 eggs, beaten
1/2 c. oil
1 c. biscuit mix
4oz can chopped chili peppers with juice
1 medium onion, chopped
1 clove garlic, minced
2 c. shredded cheese
4 c. sliced squash (zucchini and crookneck yellow squash)
Combine eggs, oil and biscuit mix. Stir in peppers, onion, garlic,
and half the cheese. Stir in squash. Put in 9 x 13 pan Bake at 350
for 40 min. Sprinkle remaining cheese on top and bake for 5 more
minutes. Yummy and great for leftovers too!!
