- 1 yellow cake mix
- 1 sm. box vanilla instant pudding
- 1 can fruit cocktail with syrup
- 3/4c. coconut
- 3 large eggs
- 1/4c. oil
- 1/2 c. light brown sugar
- 1/2 c. chopped nuts
- Glaze:
- 1/2c. butter
- 1/2c. sugar
- 1/2c. evaporated milk
- 1c. coconut
- 8oz. whipped topping
Instructions
- Preheat oven to 350. In a large bowl, mix together cake mix, pudding mix, fruit cocktail with syrup, coconut, eggs, and oil.
- Beat with electric mixer for 3-5 mins. Pour into greased 9x13 pan.
- Sprinkle brown sugar and nuts over batter. Bake 30-35 mins. Cool for 15 mins.
- In small saucepan, combine butter, sugar and evaporated milk.
- Boil 2 mins. Stir in coconut, then pour over cake.
- Serve warm or cool with whipped topping.
