Chocolate Fudge Pecan Cake & Icing

Cake:
2 cups sugar
2 cups plain flour
dash of salt
1 stick butter
1/2 cup Crisco
6 tablespoons cocoa
1 cup water
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
l teaspoon cinnamon
CHOCOLATE FUDGE PECAN ICING:
1 stick butter
1/3 cup Coke
4 tablespoons cocoa
1 lb. powdered sugar
1 teaspoon vanilla
1/2 cup chopped pecans.
Grease 9 X 13 cake pan and set oven to 375. Sift together: sugar, flour, & salt. In sauce pan,mix butter, Crisco, cocoa and water; boil, pour over flour mixture and mix. Add buttermilk, baking soda, eggs, vanilla, & cinnamon. Pour in prepared pan and bake for 35 minutes. Leave in pan and prepare icing.
To Prepare Icing: in a medium sized saucepan, melt butter; add Coke and 4 tablespoons cocoa. Bring to a boil and remove from heat. Stir in: powdered sugar
and vanilla. Beat with mixer until smooth. Stir in 1/2 cup chopped pecans.
Quickly spread on cake.
The icing is what really makes this cake. You can even put it on a cake made with cake mix and it is wonderful. And, this icing takes 5 minutes at the most to make and spread on the cake.
