    List of Ingredients


    • 2c. flour
    • 1t. baking powder
    • 1/4c. shortening
    • 1t. vanilla
    • 2c. sugar
    • 1c. water
    • 1t. salt
    • 2 eggs
    • 3/4c. sour cream
    • 1 1/4t. baking soda
    • 4oz. melted chocolate
    • Filling:
    • 1 (12oz) pkg. frozen coconut (not fresh or dry)
    • 1 3/4 c. sugar
    • 4 oz. sour cream
    • Frosting:
    • 2c. sugar
    • 1/4c. crisco
    • pinch of salt
    • 2/3c. milk
    • 2 squares bakers chocolate or 3T. cocoa
    • 1t. vanilla


    Instructions


    1. Preheat oven to 350. Lightly grease two 8 inch round cake pans.
    2. In a large bowl combine all the dry ingredients, mixing well.
    3. Add chocolate, water, beaten eggs, shortening and vanilla.
    4. Beat for 2 minutes at high speed, stirring well. Pour into cake pans and bake for 40-45 minutes.
    5. Cool cake completely and slice layers in halves with a string.
    6. Filling: mix thoroughly and spread between each layer.
    7. Frosting: Put all the ingredients in a heavy saucepan and bring to bubbling boil.
    8. Set aside to cool. When cooled, beat with mixer until glossy and of spreading consistency.
    9. Frost the sides and top of cake generously.
