Coca-Cola Cake w/ Pecan Icing

List of Ingredients



• Cake:
  
• 2c. all purpose flour
  
• 2c. sugar
  
• 1t. baking soda
  
• 1/2c. butter
  
• 1/2c. vegetable shortening
  
• 3T. unsweetened cocoa
  
• 1c. Coca-Cola
  
• 2 eggs
  
• 1 1/2 c. mini marshmallows
  
• 1t. vanilla
  
• 1/2c. buttermilk
  
• Icing:
  
• 1/2c. butter
  
• 7T. Coca-Cola
  
• 2t. unsweetened cocoa
  
• 1 box powdered sugar
  
• 1c. chopped pecans
  






Instructions



1. Preheat oven to 325. Sift flour, sugar and baking soda together.
   
2. In a pan, bring butter, shortening, cola and cocoa to a boil.
   
3. Remove from heat and pour over dry ingredients. Add eggs and buttermilk, beat well.
   
4. Stir in marshmallows and vanilla. Pour into a 9x13 inch cake pan.
   
5. Bake 35 mins. or until done. Combine butter, coca-cola, and cocoa in a saucepan.
   
6. Bring to a boil. Add powdered sugar and pecans. Pour over hot cake while icing is still hot.
