FROZEN ORANGE PIE

baked 10" Graham cracker crumb crust
4 eggs, separated
3/4 cup sugar
1 tbsp. grated orange peel
1/4 cup orange juice
1 cup heavy cream, whipped
Beat egg yolks slightly; combine with sugar, orange peel and juice.
Cook over boiling water, stirring constantly, until thickened.
Cool.
Fold stiffly beaten egg whites and whipped cream into the cooled
orange mixture. Pour into crust. Chill.
Freeze pie. Remove from freezer, package in moisture-vaporproof
wrapping and return to freezer.
Let stand at room temperature 10 minutes before serving. Do not
thaw completely. Makes 8 servings.
