    Georgia Cracker Pie

    3/4 to 1 cup saltine cracker crumbs (or about 14 squares)
    1 cup sugar
    2 tsp baking powder
    1 cup chopped pecans
    1 tsp vanilla extract
    3 large egg whites
    1/2 pint whipping cream
    2 tbs sugar

    Blend the cracker crumbs, sugar, baking powder, and chopped nuts.
    Stir in the flavoring. Beat the egg whites til stiff and fold into
    the crumb mixture, blending well. Turn into a well-buttered 8 or
    9 inch pie pan. Bake in a 350 degree oven for 35 to 40 minutes.
    Cool on a rack and chill for several hours.

    Whip cream, adding 2 tablespoons sugar. Spread evenly over pie
    and return to refrigerator.
