Recipe Introduction
A fine loaf cake. Don't think it was that speck of bourbon that made them "hoot n holler". Perhaps it was something they took with it!!!!
CAKE
1/2 C Butter, softened
1 C Sugar
3 Large Eggs
1 C All Purpose Flour
1/2 teas Baking Powder
1/4 teas Salt
1/2 teas Ground Nutmeg
1/4 C Milk
1/4 C Molasses
1/4 teas Baking Soda
1/4 C Bourbon
3/4 Lb. Raisins
2 Cs Chopped Pecans
Cream butter; gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine next 4 ingredients; add to creamed mixture alternately with milk, beginning and ending with dry ingredients.
Combine molasses and baking soda; add to creamed mixture.
Stir in remaining ingredients.
Pour into a greased and floured 9x5x3 inch loafpan. Bake at 300 degrees F. for 1 hr. and 55 min. or until wooden pick inserted in center comes out clean.
Refrigerate cake for easier slicing.
Yield 1 loaf
NOTES: If you add some coconut this will be similar to Jack Daniels Tipsy cake.
Wrap the cake in cheesecloth and pour about ¼ cup bourbon over it and let it set in refrigerator for a few days to enhance the flavor.
