    Hummingbird Cake w/ Cream Cheese Frostin

    List of Ingredients


    • Cake:
    • 3c. all purpose flour
    • 2c. sugar
    • 1t. baking soda
    • 1/2t. salt
    • 1t. cinnamon
    • 3 large eggs
    • 3/4c. oil
    • 1 1/2t. vanilla
    • 1(8oz) can crushed pineapple, undrained
    • 1 3/4c. mashed ripe bananas
    • 1 1/2c. chopped pecans, divided
    • Cream Cheese Frosting:
    • 1/2c. softened butter
    • 1(8oz) pkg. cream cheese, softened
    • 1(16oz) pkg. powdered sugar
    • 1t. vanilla


    Instructions


    1. Cake: Stir together first 5 ingredients, add eggs and oil.
    2. Stirring until dry ingredients are moistened. Do not beat.
    3. Stir in vanilla, pineapple, bananas, and 1c. pecans. Pour batter into 3 greased and floured 9 inch cake pans.
    4. Bake at 350 for 23-28 mins. or until toothpick comes out clean.
    5. Cool 10 mins. Remove to wire rack. Cool. Stir remaining 1/2c. pecans into Cream Cheese frosting.
    6. Spread frosting between layers and on top and sides of cake.
    7. For frosting: Beat butter and cheese at med. speed with mixer until blended.
    8. Gradually add powdered sugar, beating until light and fluffy.
    9. Stir in vanilla.
