IMPOSSIBLE COCONUT PIE

4 eggs
2 c. milk
1 tsp. vanilla
1/4 c. melted margarine
1 3/4 c. sugar
1/2 c. self-rising flour
1 7 oz. bag flaked coconut (2 2/3 c.)
In a large mixing bowl, beat together the eggs, sugar, milk, vanilla, flour, and margarine until all ingredients are well combined. Fold the coconut into this mixture. Turn into 2 greased and floured 9" pie pans. Bake in preheated 350º oven for 40 minutes or until golden brown. Crust forms as pie bakes.
Makes 2 pies.
Freezes well.
