Jellied Peach Desert

3 oz / 85 g package peach or lemon flavoured gelatin
1 Tbsp / 15 ml lemon juice
1 envelope whipped topping mix
2 cups / 500 ml diced, peeled fresh peaches
1 graham wafer crust
Dissolve gelatin in 1 cup boiling water. Chill until consistency
of unbeaten egg white. Add lemon juice and beat into prepared
whipped topping. Fold in peaches. Stir over ice until mixture
mounds. Pour into crust in 9" (22 cm) pan. Sprinkle with reserved
crust. Chill.
May be served with additional sweetened fresh peach slices.
