    MACAROON SYRUP CAKE

    4oz butter
    1 cup white caster sugar
    4 eggs
    2 cups coconut
    1 cup self raising flour

    Syrup

    1 cup sugar
    2/3 cup water
    6 strips of lemon rind (peel)

    Grease an 8 inch ring pan and line base with paper, grease paper.
    Cream butter and sugar in a bowl until light and fluffy, beat in eggs one at a time, beat until combined. Stir in coconut then sifted flour. Spread mixture into prepared pan and bake in a moderately slow oven (325 degrees) for 45 minutes. Pour hot syrup over hot cake; cool in pan.

    Syrup - combine all ingredients in saucepan, stir over heat without boiling until sugar is dissolved. Bring to boil, reduce heat, simmer uncovered without stirring 3 minutes then remove lemon rind.
