Ricotta Pie

4 eggs
1/2 cup heavy whipping cream
1 t vanilla extract
1/2 cup granulated sugar
1/2 cup cooked rice
1 lb ricotta cheese
8-9 inch pie crust
Beat eggs, cream, sugar, and vanilla in medium bowl. Add cheese
and rice. Mix well.
Pour into pie crust, and bake at 350, for about 40 mins.
If you wish, you can garnish the top, before baking, with some
sprinkles of nutmeg.
