1 box white cake mix
3/4 cup vegetable oil
1 cup 7-Up or Club soda
3 eggs
2 packages pistachio instant pudding mix
1 3/4 cups finely chopped pecans
1 cup coconut
2 packages dry whipped topping (3 oz. each)
Preheat oven to 350º.
Mix together the cake mix, oil, 7-Up, eggs, 1 package of pudding, 1 cup chopped pecans, and 1/2 cup coconut.
Pour into a greased and floured 13x9" pan and bake for 45 minutes.
Icing:
Mix the dry whipped topping, milk, and 1 package of pudding. Beat well until thick. Spread on the cake. Then, sprinkle with the remaining coconut and pecans.
