List of Ingredients
- 1/2 lb. dry pinto beans
- 5c. canned, peeled tomatoes
- 1 lb. green bell peppers, seeded and coarsely chopped
- 1 1/2 lb. onions, peeled and coarsely chopped
- 2 garlic cloves, crushed
- 1 1/2 T. olive oil
- 1/2c. parsley, minced
- 2 1/2 lb. ground beef
- 1 lb. lean ground pork
- 1/3c. chili powder
- 2T. salt
- 1 1/2 t. pepper
- 1 1/2 t. cumin seeds
Instructions
- Soak pinto beans overnight in cold water in a large chili pot.
- Cover beans with fresh cold water and simmer for 2 hours. (pouring out water and rinsing beans reduces gaseous effects.)
- Saute green bell peppers, onions, garlic, and parsley in olive oil. Add pork and ground beef; brown.
- Add spices and cook for 10 mins. Combine with beans and cook, covered , for 1 hour.
- Uncover and cook for 30 more minutes ( add water if needed).
- Makes: 4 quarts.
