    West Texas Chili

    1-tbsp vegetable oil

    2-large onions

    1/2-cup green pepper

    1-cup celery

    2-pounds hamburger

    1-tbsp salt

    1-tsp black pepper

    2-tbsp chili powder

    1-tsp sugar

    3-small chili peppers, dried

    1-can (46 ounce) tomato juice

    2-medium cans chili beans



    Chop onions, green pepper and celery (stalk and leaves) very fine. Sauté in oil, stirring frequently. Place sautéed vegetables in kettle in which chili will be simmered. Add meat to sauté pan and brown, adding salt, pepper, chili powder and sugar. Crush chili peppers and sprinkle over meat. Add seasoned meat to vegetables. Add tomato juice (and water, if desired), and simmer one hour. Add beans, simmer several hours. Serves 10.
