Ingredients
1 C. boiling water
2 pkg. (4-serving size ea.) or 1 pkg. (8-serving size) Sugar Free Jell-O Brand Cherry Flavor Gelatin
1/2 C. ice cubes
12 maraschino cherries
12 Oreo cookie sandwiches
Equipment Needed:
12 paper cupcake liners
1 muffin pan
Cooking spray
1 C. liquid measuring cup
Microwave oven
Timer
Potholders
1/2 C. dry measure
1 medium mixing bowl
1 large spoon
1/4 C. dry measure
Directions
Place paper liners in 12 muffin cup.; spray lightly with cooking spray. Place 1 C. liquid measure on counter. Pour in water until water line reaches 1 C. (Bend down so your eye is level with the marking on the C. to check.) Place in microwave (grown-up assisted); microwave on high 2 minutes, or until water boils. Pour boiling water into gelatin in bowl. Stir 2 minutes until completely dissolved. (Grown-up assisted.) Fill 1/2 C. dry measure with ice cubes. (It's ok for them to be above the edge of the C..) Add to gelatin mixture; stir until ice is melted. Scoop gelatin, using 1/4-C. dry measure, into prepared muffin cup. Refrigerate 10 minutes. Remove from refrigerator and push 1 cherry into each muffin cup. Top each with 1 cookie. Refrigerate 1 hour, or until firm. Peel off paper gently; invert onto serving plate.
Yield: 12 servings.
