Ham Hash

List of Ingredients
- 1c. potatoes, peeled, diced
- 1c. diced cooked ham
- 2T. oil
- 2T. flour
- 1 sm. clove garlic, mashed
- 1 1/2c. water
- salt and pepper to taste (cayenne)
Instructions
- Make a small roux by heating oil in skillet, add flour, stir over med. heat until golden brown.
- Remove from heat. Add onion, stirring, cook, until soft.
- Put skillet back over heat, add ham, potatoes, and water.
- When it comes to a hard boil reduce heat and cover. Cook 15-18 mins.
- Add salt and cayenne.
- Serves: 2
