Recipe Introduction
Hush puppy is an old Southern term that originated after the Civil War. People didn't have enough for themselves to eat let alone feed their dogs. So when the old hounds started barking from hunger, they would throw pieces of fried cornbread to them, yelling, "Shut up, dog! Hush puppy!"
List of Ingredients
- 2c. cornmeal
- 1c. plain flour
- 1t. baking powder
- 1t. salt
- 1/2t. baking soda
- 1/2c. parsley, finely chopped
- ground cayenne pepper
- 2 eggs, beaten
- 1c. buttermilk
- 1c. green onion, finely chopped
- 2T. hot bacon drippings or oil
- 1/2t. garlic powder
- oil for deep frying
Instructions
- Combine all dry ingredients. Add eggs, buttermilk, onion, and bacon drippings.
- Mix well. Drop in deep hot fat by spoonsful and brown on all sides.
