Crunchy Parmesan Chicken

- 1c. crispy rice cereal
- 1/4c. grated Parmesan cheese
- 1t. garlic powder
- 1t. paprika
- 1/2t. salt
- 1/2t. pepper
- 1/4c. low fat buttermilk
- 1 lb. chicken
Instructions
- Preheat oven to 350. Lightly coat a baking pan with cooking spray.
- Crush cereal into coarse crumbs. Combine crumbs, parmesan, garlic powder, paprika, salt and pepper in shallow dish.
- Pour buttermilk in different dish. Remove skin from chicken. Dip pieces in buttermilk, then into crumbs.
- Place chicken on baking pan, arranging the pieces so they don't touch.
- Bake 1 hour or until done.
- Each serving of 2 pieces:8g. carbohydrate 30g. protein 7g. fat 217 cal.
