    8 oz. cream cheese, at room temperature
    5 Tbsp. instant vanilla pudding
    1 can (8 oz.) unsweetened
    crushed pineapple with
    juice

    Cream together ingredients.
    Add:
    1/2 c. Coco Lopez real cream of coconut
    (this must be mixed well before measuring)
    1/4 c. rum
    peel and juice of 1 lemon
    Mix together.
    Let sit 2 to 3 hours or 3 to 4 days before serving.
    Serve with fresh fruit or canned pineapple.
