Caramel Icing II

List of Ingredients
- 1/2c. white sugar
- 1/3c. hot water
- 1/2c. cream
- 2c. white sugar
- 1t. vanilla
Instructions
- Melt 1/2c. white sugar in hot skillet until it begins to smoke. Add hot water, remaining sugar and cream.
- When sugar dissolves and mixture begins to boil, turn heat lower. Cook slowly until at soft ball stage when tested in cold water.
- Remove from heat and cool to lukewarm. Add vanilla. Cream together and spread on cake.
- If it hardens before you can spread it, add 1T. cream and warm to soften; spread on cake.
