    Grilled Steak With Red Wine Marinade

    A tasty steak for summer grilling, or use your stovetop grill pan or broiler. Serve with the optional Sweet Onion Bernaise Sauce for an extra-special meal. This sweet onion bearnaise sauce is particularly delicious with grilled or broiled steak or chicken, or try it with pork tenderloin medallions or grilled lamb.


    Ingredients:
    •2 to 4 1- to 1 1/2-inch thick strip steaks or rib steaks
    •1 cup dry red wine
    •2 teaspoons garlic herb seasoning or combination of 1 teaspoons dried herbs and 1 teaspoon garlic powder
    •1 teaspoon chili powder
    •1 teaspoon salt
    •2 teaspoons cracked black pepper or about 1 1/2 teaspoon coarsely ground pepper
    •Sweet Onion Bearnaise Sauce, optional (link below)

    Place steaks in a large food storage bag. Add remaining ingredients. Marinate for 2 to 4 hours, turning occasionally to keep the steaks coated with liquid. Grill over medium coals for 4 to 6 minutes on each side for 1-inch steaks or for about 7 to 9 minutes on each side for 1 1/2-inch steaks, or until done as desired. Use tongs or a spatula (do not pierce) to turn steaks.
    If desired, serve with Creamy Sweet Onion Bearnaise Sauce.
    Serves 2 to 4.

    Creamy Sweet Onion Bearnaise Sauce
    INGREDIENTS:
    •2 tablespoon minced sweet onion
    •1 tablespoon tarragon vinegar
    •1/4 teaspoon dried leaf tarragon
    •4 tablespoons butter
    •4 ounces sliced mushrooms
    •1/2 to 2/3 cup heavy whipping cream, divided
    •2 egg yolks, lightly beaten
    •dash of lemon juice
    •dash ground cayenne or chipotle chili pepper

    Combine minced onion, vinegar and tarragon in small saucepan over medium heat. Simmer, stirring constantly, until liquid has evaporated. Add the butter and mushrooms. Cook until lightly browned; pour in 1/3 cup cream. Bring to a boil. Stir a small amount of the hot mixture into the egg yolks, whisking rapidly to incorporate. Return the mixture to saucepan. Cook, stirring constantly, until slightly thickened. Stir in remaining cream for a creamier sauce. Add dash of lemon juice and ground cayenne or chipotle pepper to taste. Serve immediately.
    Serves 6.
