Onion Mushroom Gravy

- 1t. vegetable oil
- 1 small onion, minced
- 1c. chopped mushrooms
- 1 can (13 3/4 oz) beef broth
- 3/4c. plus 1T. water
- 2T. chopped parsley
- 1/2t dried thyme
- 1/2t Worcestershire sauce
- 1 1/2T. cornstarch
- 1/8t. pepper
Instructions
- Heat oil in saucepan over medium low heat. Add onion and saute 6 minutes or until soft and starting to brown.
- Add mushrooms and saute until soft, about 2 minutes. Add broth, the 3/4c. water, parsley, thyme, and Worcestershire. Boil 8 minutes or until reduced to 2c.
- Stir the 1T. water and cornstarch in a small cup until smooth. Stir into broth mixture.
- Simmer 2 minutes or until thickened. Stir in pepper.
