    Recipe Introduction


    A highly seasoned rub gives this roast a tongue-tingling crust to accentuate the mild, juicy center of the loin.


    List of Ingredients


    • 1 (2 lb.) boneless loin pork roast
    • 3T. paprika
    • 1/2t. cayenne pepper
    • 1t. garlic powder
    • 2t. oregano
    • 1/2t. salt
    • 1/2t. ground white pepper
    • 1/2t. cumin
    • 1/4t. nutmeg


    Instructions


    1. Preheat covered grill set up for medium-high indirect grilling. Combine all seasonings and rub well over surface of the roast.
    2. Place on grate away from heat, over a drip pan with water. Close barbecue cover and grill pork until thermometer inserted in center reads 155-160 degrees.
    3. Remove from grill and let rest 10 minutes before slicing.
    4. Serves: 6
