    Beef & Pork Meatloaf & Onion Gravy

    2 cups bread crumbs
    1 pound lean ground beef
    1 pound lean ground pork
    1 egg, slightly beaten
    3 Tbsp chopped parsley
    1 medium onion, chopped
    3 cloves garlic, chopped or pressed
    1 stalk celery, finely chopped
    1/2 tsp. thyme
    1/2 tsp pepper
    1 1/2 tsp. salt

    Preheat oven to 350 F. Mix all ingredients together. Shape into a
    loaf pan. Bake for 1 1/2 hours. If desired, spoon onion gravy over
    baked meatloaf slices.


    Onion Gravy
    Makes About 2 cups

    1/2 cup onion, minced
    3 Tbsp butter
    3 Tbsp flour
    1 1/3 cup beef stock
    1 Tbsp minced parsley
    1/4 cup dry red wine


    Saute onion in butter for about 3-5 minutes, or until slightly
    browned. Stir in flour and add remaining ingredients. Simmer for
    3-5 minutes, stirring constantly. Serve.
