Cheese Stuffed Meatballs & Pasta **

2 oz shredded mozzarella cheese (part skim)
1/4 cup liquid egg substitute
2 tsp olive oil
3/4 cup canned crushed tomatoes
4 cups water
1/2 cup seasoned bread crumbs
16 oz raw ground beef, 75 % lean
1 cup tomato sauce, no salt
16 oz cooked, whole wheat angel hair pasta
Recipe
In a large saucepan, bring 4 cups of water to boil to prepare 16 oz whole wheat angel hair pasta
While pasta is being prepared, in a large bowl, mix ground beef, egg substitute and bread crumbs
Shape into meatballs, make an indentation in each meatball and fill with shredded mozzarella cheese, close indentation of meatball, set aside
Stir pasta, if done, drain and set aside
In another pan, over medium-high heat, add olive oil, crushed tomatoes and tomato sauce, bring to a boil
Slowly stir in meatballs and cook over medium-low heat for 20-30 minutes
Serve meatballs and sauce over cooked pasta
