Yummy Porcupine Meatballs

List of Ingredients
- 1 (10 1/2 oz) can condensed tomato soup
- 1 lb. ground beef
- 1/4c. uncooked rice
- 1 egg, slightly beaten
- 1/4c. minced onion
- 2T. minced parsley
- 1t. salt
- 1 small clove garlic, minced
- 2T. shortening
- 1c. water
Instructions
- Mix 1/4c. soup with beef, rice, egg, onion, parsley, and salt.
- Shape into 1 1/2 inch balls (about 16). Brown meatballs and garlic in shortening in skillet.
- Blend in remaining soup and water. Cover; simmer 40 mins. or until rice is tender; stir often.
