- 16oz. frozen hash brown potatoes
- 14 1/2oz. can stewed tomatoes
- 4oz. Velveeta, diced
Instructions
- Spray a 1 1/2 qt. microwave safe casserole dish. Place potatoes and tomatoes (undrained) in the dish and stir.
- Microwave, covered, on high for about 6-8 mins. Stir once during cooking.
- Stir in velveeta and continue cooking for another 4 mins. Stir once.
- Yield: 4-6 servings.
