Is there any way to "revive" brown sugar after it has hardened?
A: Because brown sugar contains molasses, it has a high moisture content and tends to dry out or harden when it is exposed to air for an extended period of time. To prevent brown sugar from drying out, you should store it in a cool dry place in an air-tight container or thick resealable plastic bag. It keeps especially well in the refrigerator or freezer for up to six months.
If it does dry out, there are several easy ways to soften it. If you don't need to use the right away, put a slice of fresh apple in a sealed bag with the brown sugar and let it stand for two to three days; as the apple releases its moisture, the brown sugar will soften. For a more immediate remedy, place the hardened brown sugar in a covered dish and microwave on high for thirty seconds to one and a half minutes. Check every fifteen seconds to ensure that it doesn't begin to melt. You can also warm the sugar in a pie plate in a 250° conventional oven for five to ten minutes, or until softened. Use the softened sugar at once, as it will become hard again as it cools.
