Cut Up Apples

Is there an easy way to cut up apples for baking in pies, tarts, muffins and crisps? I try to use my apple cutter, but I often miss the mark and end up having to pare the apples anyway.
A: Here's what works best for me: First I peel the apple (with my super-sharp OXO peeler), either north to south or east to west, depending on my mood. Then I halve it lengthwise and scoop out the core with a melon baller. The halves look perfect every time and they're easy to quarter, chop or cut into neat, uniform slices for tarts
