How do you season a wok?
A: Before using a new wok, you need to remove any industrial oils that may have been used in the manufacturing process. Scrub the wok with a scouring pad. If the wok still feels greasy, fill it with hot soapy water and boil it on the stovetop for about ten minutes. Scrub it again and repeat if necessary. After the metal color changes from orange-red to purple to black, remove the wok from the stove, dry it, and rub it generously with peanut or corn oil. Place the wok over low heat and let the oil absorb for about ten minutes. You may have to repeat this last step a few times before a nice black patina forms. Never wash a properly seasoned wok with a scouring pad or heavy soap--very hot water and a mild dishwashing soap will do.
