Recipe Introduction
Old Hoppin John's liked ever-wheres they grow blackeyed or cowpeas. Cooked with hog jowl, ham or bacon, it's good.
List of Ingredients
- 1/2 lb. blackeyed or cowpeas
- 2t. salt
- 1c. rice
- 1/4t. bakin soda
- 1/4lb. cut up pork with fat left in (bacon, side meat, jowl, etc.)
Instructions
- Soak peas overnight, drain, rinse and put in kettle. Cover with boilin water.
- Add the soda and bring to a boil. Drain and rinse again. Now put in fresh water and bring to boil, allowing a quart and half water, add the salt and meat bits and cook just at boiling point for close to 4 hours.
- Now add the rice and boil 45 minutes longer.
