    If it was a school day when we kilt hogs, us young uns had to stay home and help. Meanest job was turnin the sausage grinder.


    List of Ingredients


    • (For each 2 lb. lean pork)
    • 1t. black pepper
    • 2 lb. pork
    • 1t. red pepper, crumbled
    • 2T. backbone fat
    • 1/2t. salt
    • 2T. sage


    Instructions


    1. After grindin meat, mix other ingredients well, then sprinkle and work in with paddle.
    2. Best to keep sprinklin as you stir. Work down into pats and keep cool till used.
