Christmas Brunch Casserole

List of Ingredients
- 1 lb. bacon
- 1T. butter
- 2 onions, chopped
- 2c. fresh sliced mushrooms
- 4c. frozen hash browns, thawed
- 1t. salt
- 1/4t. garlic salt
- 1/2t. pepper
- 4 eggs
- 1 1/2c. milk
- 1 pinch dried parsley
- 1c. shredded cheddar cheese
Instructions
- Preheat oven to 400. Grease 9x13 inch casserole dish.
- Cook bacon until evenly brown. Drain and set aside.
- In skillet melt butter and fry onions and mushrooms until tender. Place potatoes in bottom of prepared dish.
- Sprinkle with salt, garlic salt and pepper.
- Top with bacon then onions and mushrooms.
- In large bowl, beat eggs with milk and parsley. Pour over casserole.
- Top with cheese. Cover and refrigerate overnight.
- Bake for 1 hour or until set.
- If preparing and cooking the same day, cook for 45 minutes.
