    Easy Sweet Potato Casserole

    2 cans (16-oz.) vacuum-packed whole sweet potatoes, drained
    1 cup crushed pineapple in juice (drained)
    1 Tbsp. +2 Tbsp. margarine
    1/2 cup brown sugar
    1/4 cup all-purpose flour
    1/3 cup chopped pecans

    Recipe




    Preheat oven to 350 degrees F. In a 1 1/2-quart baking dish, layer the first can of sweet potatoes topped with 1/2 cup of the pineapple. Layer the second can of sweet potatoes and top with
    remaining 1/2 cup of pineapple. Dot with 1 Tbsp. margarine. Combine 1/2 cup brown sugar and flour; cut in 2 Tbsp. chilled margarine with a pastry blender or 2 knives until mixture
    resembles coarse meal. Stir in pecans; sprinkle over the casserole. Bake 25 minutes or until hot, then set under broiler for 1-2 minutes to brown the crumb topping.
