This spicy cool pumpkin dessert is a refreshing twist on pumpkin pie. Using light ice cream and reduced fat graham cracker crust helps lower calories and fat. Freeze Time: 5-6 hours or overnight.
List of Ingredients
1 cup pureed pumpkin
1/2 cup sugar
2 Tbsp. molasses
1/4 tsp. salt
1/2 tsp. ginger
1/2 tsp. cinnamon
4 cups light vanilla ice cream
1 reduced fat graham cracker pie crust
lite or nonfat whipped topping (optional)
Recipe
Combine pumpkin, sugar, molasses, salt, ginger and cinnamon. Soften ice cream, beat and fold into pumpkin mixture. Mix well. Place mixture into pie crust. Freeze until firm and serve. For longer storage, freeze, then wrap and replace in freezer. Serve with light whipped topping and garnish with a walnut half.
