    Pork Roast with Breadcrumb Crust

    The herb flavor of the roast is great with a spinach salad.

    List of Ingredients




    1 1/2-lb. boneless pork loin
    3/4 cups Italian-seasoned dry breadcrumbs
    1 large egg, beaten
    1 Tbsp. butter or margarine

    Recipe




    Preheat oven to 375°F. Trim any visisble fat from tenderloin. Dip pork loin into the egg, then roll in breadcrumbs, coating completely. Melt butter or margarine in heavy skillet over medium-high heat. Add pork; cook until browned on all sides, about 5 minutes. Place on rack set in large roasting pan. Roast pork for approximately 40 minutes, until meat thermometer in center registers 160°F. Let stand for 5 minutes before slicing and serving.
