Pumpkin Spice Cake

A moist and tasty Fall cake, or a fancy roll cake for the holidays
List of Ingredients
2 eggs
2/3 cup sugar
3/4 cup mashed pumpkin
1 tsp. vanilla
3/4 cup all purpose flour
1 tsp. baking powder
1 tsp ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. salt
1/8 tsp. nutmeg
1 Tbsp. powdered sugar sifted

nonstick cooking spray
Recipe
With electric mixer, beat eggs on high for 2 minutes. Gradually add sugar one tablespoon at a time for an additional 2 minutes until mixture is thick and pale. Add pumpkin and vanilla, mix well. In a separate bowl, sift flour and next 5 ingredients. Add flour mix to the pumpkin mix and stir well. Spray cake pan with nonstick cooking spray, cover pan with wax paper, then spray paper with nonstick spray. Add mixture on top of wax paper in the cake pan. Bake at 375 degrees for 32-35 minutes or until toothpick comes out clean from center of cake. Let cool 5 minutes in the pan on cake racks. Remove cake from pan with wax paper and complete cooling on racks. Sprinkle top of cake with powdered sugar. Cut cake into triangles and serve.
HOLIDAY OPTION: For an especially festive treat make this cake into a pumpkin roll with lowfat, vanilla frozen yogurt.
Mix ingredients as before, reducing pumpkin to 2/3 cup. Spoon mixture into a I5xIOxI" cookie sheet which has been sprayed with non-stick spray. Bake 15-17 minutes. Sprinkle a clean dish towel with 1/4 cup powdered sugar. Invert cake on dish towel and cool for 2 minutes (You may have to tap cake out of cookie sheet with a knife so that the cake doesn't split). Roll cake up in the dish towel and allow to cool completely. Soften hard, frozen yogurt (approximately 1 1/2 cups) by placing in the refrigerator for 1/2-1 hour or defrost in the microwave (30 seconds on defrost setting). Frozen yogurt should be consistency of soft serve frozen yogurt found in the Produce section in Giant stores. When cake is cool, unroll, spread on frozen yogurt, and roll cake back up.
