List of Ingredients
- 1c. cornmeal
- 2 egg beaters (1/2c)
- 1/2 can cream style corn
- 1c. grated non fat Cheddar cheese
- 1/2t. lite salt
- 1/4c. flour
- 1/2c. low fat buttermilk
- 1/2c. liquid Butter Buds
- 1 can Rotel tomatoes (drained)
- 1 1/2t. baking powder
Instructions
- Beat egg beaters and add remaining ingredients mixing well.
- Pour into a large cast iron skillet, that has been sprayed with a non fat cooking spray.
- Bake 50-60 mins. at 350.
- Yield: Serves 10-12
