Grandma's Spice Cake

3/4 cup butter or shortening
1 cup brown sugar
1 egg
1/2 cup raisins
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cinnamon
2 cups all-purpose flour
1/2 teaspoon baking soda
1 cup buttermilk
2 teaspoons baking powder
Preheat oven to 375°F.
Cream together the butter, brown sugar and egg until light and fluffy. Stir in the raisins, salt and spices. Mix well. Add half the flour. Blend in the baking soda and milk. Stir in the remaining flour and baking powder.
For layer cake: Pour batter into two greased and floured 9-inch cake pans. Bake at 375°F for 25 to 30 minutes or until top springs back when touched, or test with cake tester. Allow to cool for 10 minutes, then invert onto wire racks to finish cooling before frosting.
For Sheath Cake: Pour into greased and floured 9x13-inch pan. Bake at 350°F for 40 to 45 minutes or until top springs back when touched, or test with cake tester. Frost in pan.
Cream Cheese Frosting
3/4 cup butter, softened
8 ounces cream cheese, softened
1-pound box (3-3/4 cups) confectioners sugar
1 teaspoon vanilla extract
1 cup chopped pecans (optional)
Blend softened cream cheese and butter with electric mixer. Beat in the sugar, a little at a time. Add the vanilla and pecans, if desired, and mix well.
