    Herb-Marinated Pork Roast

    List of Ingredients


    • 3 1/2 to 4 lb. bone-in pork loin roast
    • 1 small onion, chopped
    • 1/2c. Crisco oil
    • 3T. cider vinegar
    • 1T. lemon juice
    • 1t. dried oregano
    • 2 cloves garlic, minced
    • 1/2t. dried rosemary
    • 1/4t. dried dill weed
    • 1/4t. salt
    • 1/4t. pepper


    Instructions


    1. Place roast in large bowl or large heavy plastic food storage bag. Blend remaining ingredients.
    2. Pour over roast. Cover dish or seal bag. Refrigerate 8 hrs. or overnight, turning roast over occasionally.
    3. Preheat oven to 325. Remove roast from marinade. Discard marinade.
    4. Place roast in roasting pan. Roast at 325 for 2-3 hours, or until internal temperature registers 170 degrees.
    5. Let stand 15 mins. before carving.
    6. Makes: 6-8 servings.
