Herb-Marinated Pork Roast

List of Ingredients
- 3 1/2 to 4 lb. bone-in pork loin roast
- 1 small onion, chopped
- 1/2c. Crisco oil
- 3T. cider vinegar
- 1T. lemon juice
- 1t. dried oregano
- 2 cloves garlic, minced
- 1/2t. dried rosemary
- 1/4t. dried dill weed
- 1/4t. salt
- 1/4t. pepper
Instructions
- Place roast in large bowl or large heavy plastic food storage bag. Blend remaining ingredients.
- Pour over roast. Cover dish or seal bag. Refrigerate 8 hrs. or overnight, turning roast over occasionally.
- Preheat oven to 325. Remove roast from marinade. Discard marinade.
- Place roast in roasting pan. Roast at 325 for 2-3 hours, or until internal temperature registers 170 degrees.
- Let stand 15 mins. before carving.
- Makes: 6-8 servings.
