List of Ingredients
- 3T. oil
- 1(5lb) boneless pork loin, tied
- 3 minced garlic cloves
- 1/4c. chopped parsley
- 4c. red wine
- 1/2t. salt
- 1t. peppercorns
- 2T. butter
- 2T. flour, all purpose
Instructions
- Heat oil in a Dutch oven. Sear meat in the oil to brown on all sides.
- Add garlic, parsley, wine, salt, and peppercorns. Reduce heat and simmer covered for 3 hours.
- Remove meat and reduce stock to 1/3 its volume. Strain.
- Heat butter in a smaller sauce pan. Add the flour and cook 2 minutes, pour in the stock and simmer until thicken.
- Carve pork and serve with sauce separately.
