    List of Ingredients


    • 3T. oil
    • 1(5lb) boneless pork loin, tied
    • 3 minced garlic cloves
    • 1/4c. chopped parsley
    • 4c. red wine
    • 1/2t. salt
    • 1t. peppercorns
    • 2T. butter
    • 2T. flour, all purpose


    Instructions


    1. Heat oil in a Dutch oven. Sear meat in the oil to brown on all sides.
    2. Add garlic, parsley, wine, salt, and peppercorns. Reduce heat and simmer covered for 3 hours.
    3. Remove meat and reduce stock to 1/3 its volume. Strain.
    4. Heat butter in a smaller sauce pan. Add the flour and cook 2 minutes, pour in the stock and simmer until thicken.
    5. Carve pork and serve with sauce separately.
    6. Serves:8
