- 1/3c. light soy sauce
- 1/2c. dry sherry
- 2 cloves garlic, minced
- 1T. dry mustard
- 1t. ginger
- 2t. thyme
- 2 lb. lean boneless pork roast
Instructions
- Combine soy sauce, sherry, garlic, and spices in a plastic locking bag and mix well.
- Place the pork in the bag and marinate in the refrigerator 10-12 hrs.
- Heat the oven to 325. Remove the pork, discard marinade, and roast the pork for 2 hrs.
- Let roast rest 15 mins. before slicing.
