Fingerling Potatoes

- 3 lb. unpeeled fingerling potatoes, scrubbed
- 1T. plus 1 1/2t. salt
- 1/2t. pepper
- 2t. thyme
- 1/4c. extra virgin olive oil
Instructions
- Place potatoes in large saucepan, cover with water and add 1T. salt; bring to a boil.
- Simmer uncovered 15-20 minutes until just tender. Drain.
- Drape a kitchen towel over potatoes and allow to steam 5-10 minutes.
- When cool enough to handle, cut each potato in half lengthwise.
- Place in a bowl and toss with 1 1/2t. salt, pepper, thyme, and olive oil.
- Serve warm.
