    Fingerling Potatoes

    List of Ingredients


    • 3 lb. unpeeled fingerling potatoes, scrubbed
    • 1T. plus 1 1/2t. salt
    • 1/2t. pepper
    • 2t. thyme
    • 1/4c. extra virgin olive oil


    Instructions


    1. Place potatoes in large saucepan, cover with water and add 1T. salt; bring to a boil.
    2. Simmer uncovered 15-20 minutes until just tender. Drain.
    3. Drape a kitchen towel over potatoes and allow to steam 5-10 minutes.
    4. When cool enough to handle, cut each potato in half lengthwise.
    5. Place in a bowl and toss with 1 1/2t. salt, pepper, thyme, and olive oil.
    6. Serve warm.
