Herbed Potatoes

2 ½ lbs. small red potatoes
½ cup butter
1 clove chopped garlic
1 small onion finely chopped
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Boil potatoes until done, drain and slice into ½ or ¼ depending on size.
In a large pot ( the one you cooked the potatoes in is fine, just rinse and dry.)
Melt butter, add garlic and onion, cook on medium low heat until onion becomes translucent.
Add potatoes, parsley, salt and pepper, toss to mix and serve.
Option:
If you are having Mashed Potatoes with dinner, simply:
melt the butter, add garlic, and onion cook as directed, pour into cooked potatoes in place of the butter you would normally add, try using half and half instead of milk, it makes for a richer mash.
Mash potatoes to your desired consistency, sprinkle in parsley, mix, serve.
