Jalapeno Potatoes

This can be served immediately or refrigerated overnight and reheated for more flavor.
List of Ingredients
- 6-8 medium to large potatoes
- 1 medium jalapeno pepper
- 1/2c. diced bell pepper
- 3/4 stick butter
- 3/4c. milk
- 1 heaping tablespoon self rising flour
- 1 1/2c. grated cheese
- 1t. salt
Instructions
- Peel potatoes, cut into slices (medium thickness) and boil until slightly tender; drain.
- Spread potatoes evenly in 9x13 casserole dish. Saute peppers in butter for 2 mins.
- Add milk, salt, flour and 1/2c. cheese; simmer, stirring, until sauce thickens.
- Pour sauce evenly over potatoes, then sprinkle remaining cheese over the top.
- Bake 30-45 mins. at 350, or until bubbly.
