Non stick cooking spray
8 small (two inch) (5cm) red potatoes, washed, with peel, cut in wedges
1 medium green pepper, cleaned and sliced into one inch strips
1 medium red pepper, cleaned and sliced into one inch strips
2 Tbsp. (30mL) canola oil
2 Tbsp. (30mL) Mrs. Dash® Original Blend
Recipe
1. Spray a sheet pan with non stick cooking spray. Lightly spray potatoes with non stick cooking spray and place on sheet pan.
2. Roast potatoes in a preheated oven 400°F (200°C) for 20 minutes until potatoes are tender yet firm. Remove from oven and let cool.
3. Sauté green and red peppers and roasted potatoes in oil in a cast iron skillet until peppers are soft. Add Mrs. Dash® Original Blend.
