Parsley Buttered New Potatoes

- 2 lb. red potatoes, washed
- salt
- water
- 1/4 lb. butter
- 1 clove garlic, minced
- 3T. parsley, chopped
Instructions
- Peel a small strip around the middle of each potato. Boil potatoes in salted water until tender.
- Drain. Melt butter in a saucepan. Saute garlic briefly. Toss hot potatoes in butter and garlic.
- Sprinkle generously with chopped parsley. Serve hot.
